Slow Braised Lamb Shoulder Recipe | Tender, Flavourful & Perfect for Sharing
There’s something special about a slow braised lamb shoulder. It’s the kind of dish that fills the kitchen with incredible aromas and brings people together around the table. Rich, tender and full of flavour, this is a go-to for relaxed entertaining or a comforting weekend meal.

Ingredients
1 whole lamb shoulder (approx. 1.5 to 2kg)
2 tbsp olive oil
1 brown onion, sliced
4 cloves garlic, crushed
2 carrots, roughly chopped
2 cups chicken or beef stock
1 cup red wine
2 tbsp tomato paste
2 sprigs rosemary
2 sprigs thyme
Salt and pepper
Method
Preheat your oven to 160°C.
Season the lamb shoulder generously with salt and pepper.
In a large oven-safe pot or roasting dish, heat olive oil over medium-high heat and sear the lamb on all sides until golden brown. Remove and set aside.
In the same pot, add onion, garlic and carrots, cooking until softened and fragrant. Stir through the tomato paste.
Deglaze with red wine, allowing it to reduce slightly, then add the stock and herbs.
Return the lamb to the pot, ensuring it is partially submerged in the liquid.
Cover tightly and place in the oven for 3.5 to 4 hours, or until the meat is tender and falling apart.
Remove from the oven and rest for 10 to 15 minutes before serving.
